Cooking Instructions

Preparing the perfect sausages is easy no matter how you plan to cook them. Just follow the instructions below and always remember "Low & Slow" for best results. Cooking fresh sausages (particularly pork ones) at too high a temperature will cause the casings to burst and an unneccessary amount of moisture coming out of the product. The perfectly cooked sausage will have a fully intact casing so that all the juices and flavour are retained inside.

Prior to cooking your sausages make sure they are fully thawed. This can be done either in the refrigerator for 3-5 hours or by running under cold water for 15-20 minutes.

Gas Barbecue / Grill

The key to cooking fresh sausages on a gas grill is INDIRECT HEAT.Preheat to 450-500 degrees using all burners. Turn off the middle and one outside burner (assuming a 3 burner grill) leaving one outside burner on high. Position the sausage on the side opposite the heat. Close the lid and cook for 10 minutes, flip and repeat. Once internal temperature is reached finish over the direct heat for a couple minutes on each side.

Conventional Oven

Preheat oven to 325 degrees. Place sausages on a parchment or foil lined baking sheet and bake for 30-40 minutes until desired internal temperature is reached. For additional flavour coat sausages with softened butter before they go in the oven.

Pan Fry

Place sausages in a pan with a small amount of butter or oil. Cook over medium heat for 20-25 minutes, turning frequently until desired internal temperature is reached.

Boil & Pan Fry (Pork Casings Only)

Bring 2-3 inches of water to a boil in either a pot or deep pan. Once boiling add the sausages and cover, leave for 8-9 minutes. This will heat the sausages to about 130-140 degrees. Remove from the water, place in a pan with a small amount of oil or butter and cook over medium heat for 8-10 minutes turning frequently until desired internal temperature is reached.

Stove Top

Place sausages in a pan with a small amount of butter or oil. Cook over medium heat for 7-10 minutes, turning occasionally until desired internal temperature is reached.

Conventional Oven

Preheat oven to 325 degrees. Place sausages on a parchment or foil lined baking sheet and bake for 15-20 minutes until desired internal temperature is reached.

Meatballs (Fully Cooked)
Conventional Oven

Preheat oven to 350 degrees. Place meatballs on a parchment lined baking sheet. Cook for 10-15 minutes until heated through.

Stove Top

Place meatballs in a pan and cook over medium heat until heated through. This can also be done with sauce in the pan if desired.
